Dinner Time!

Top 5 meals I prepared last week (week ending 12/11/11)!  Hope this is helping some of you, if anything it is giving me a good food log to refer to when I am stumped.

1. Crispy Spicy Beef - Here is a link to the recipe I use!  I have been addicted to this lately and usually end up making it once a week.  Here is my tip for this dish: if you slightly freeze your meat before you slice it, it makes it really easy to slice the meat nice and thin.

2. Chicken Cordon Bleu and Spinach Salad- Warm up your salad dressing (vinaigrette) a little, it will wilt the spinach nicely.  I added pomegranate seeds and pecan nuts to our salad, it was good!

3. Leftovers Meal! Pork Roast and Lemon Cream Pasta - I used the zest of two lemons added to 1/2 cup of cream and it made a nice little sauce for my leftover spaghetti.  I love using up what I have in the fridge with some fresh ingredients, it makes dinner so easy.

4. Burritos, Beans and Chips - Use the raw uncooked tortillas for your Mexican dishes and your family will think your a pro!  Oh and you have to cook them before you serve them but its real easy. Just thought I better add that ;)

5. Pot Roast - so I can't take credit for this one.  Grandma babysat the kiddos while we went skiing and Christmas shopping!  She did awesome, she even did my laundry and cooked dinner!  Thanks, grandma!

What did you eat?

On a scale of 1 to 10, I would give my meals a 7 last week.  Here are the top 5.

1. Costa Vida - I know #1 shouldn't be a restaurant meal but in truth I only cooked 4 dinners last week :)

2. Turkey Pot Pie - Leftover turkey and store bought pie crusts made this meal pretty easy and quite tasty.  I also switched it up by using sweet potatoes instead of regular potatoes.

3. Chili, Salad, Cornbread and Rolls - I used frozen Rhodes rolls. Click here for a quick thaw tip I use all the time because I usually forget to get the rolls out of the freezer early enough.

4. BBQ Chicken, Sweet Potato Fries and Cheesy Cauliflower - I like to make my fries in the oven and cover the taste of cauliflower with cheese sauce.

5. Spaghetti and Salad - Plain old spaghetti and salad.  I do however make my own marinara sauce which is delicious.  I will post the marinara sauce recipe.
